Parsnips
Liking sandy, not-too-well fertilized soil, plant parsnips directly in
early May, at a depth of ½ inch.
Slow-growing, they are best started indoors to make allowances for our
short seasons here.
Thin to three inches apart. Keep the soil well mulched and moist. If
germination is a problem, mix some radish seed in with the parsnip to
aid in breaking up the soil and prevent soil crusting.
Days to maturity: 120
