Beets can be sown as soon as the ground is workable.
sow early ½ to ¾ inches deep, every two weeks for continuous supply.
Thin to about 3 inches apart.
The young leaves are delicious eaten raw in salads or sandwiches, like
lettuce, or cooked like spinach.
The older leaves are fine cooked like spinach, but tend to be too
tough to eat raw.
When preparing to cook beets, do not cut the stems completely off, or
the juice will 'bleed'
Germination rates vary from 4 to 10 days.
Maturity: 34-65 days depending on the variety.
