I would only harvest only half of them to let the root system to develop
for
this year. The red is called strawberry and the green is apple. You can
harvest when they are accetable height for you. I find it best to pluck
the
stalks from the root instead off cutting them. Also if you put a wooden
fence around them the plants will grow to the top of the fence and
increase
the thickness of the rubarb. In a couple of years you can dig up the roots
and tear them in half to get twice as may plants.Don't do all the plants
the
one time. This is a good time to fertilize with manure. Manure builds up
the
structure of the soil as well as fertilizing. Also if you see any stalks
going to seed cut this off if not all the energy will be used for seed
production and not for the stalks.
